Chicken Caesar Salad with Yogourt Dressing

Turn your favourite Caesar salad into a healthy main with Astro Original Balkan Plain 1% yogourt. Traditional dressings are weighed down by large amounts of oil, but this lightened-up version contains calcium-rich Astro Original yogourt. 


2 (250 g) boneless skinless chicken breasts
2½ tbsp (38 mL) olive oil, divided
¼ tsp (1.2 mL) each salt and pepper
8 thin slices baguette
8 cups (64 grams) torn romaine lettuce


½ cup (125 mL) Astro Original Balkan Plain 1% yogourt
2 tsp (10 mL) olive oil
2 tsp (10 mL) lemon juice
2 anchovy fillets, minced
1½ tsp (7.5 mL) grainy mustard
1 small clove garlic, minced
1 pinch each salt and pepper
⅓ cup (33 g) grated Parmesan cheese, divided


  1. Brush chicken with 1 tbsp of the oil; sprinkle with salt and pepper. Place chicken on a lightly oiled grill preheated to medium-high heat; close lid and grill, turning once, until cooked, about 7 minutes per side. Let stand for 5 minutes before slicing.
  2. Meanwhile, brush baguette with remaining oil; grill over medium heat, turning once, until toasted, 1 to 2 minutes.

  3. Make the dressing. In a large bowl, whisk together Astro Original yogourt, oil, lemon juice, anchovies, mustard, garlic, salt and pepper; stir in all but 2 tbsp of the cheese. Toss with lettuce and sliced chicken.
  4. Divide salad among plates. Top with remaining cheese and grilled baguette slices.
