Chicken Salad Wrap

Nothing says a quick lunch like a wrap! A great choice for busy home cooks since chicken salad keeps in the fridge for up to 3 days and just needs to be wrapped up and enjoyed come lunchtime.
2 cups (500 mL) cooked, cold, shredded or diced chicken
1 cup (250 mL) chopped red pepper, (about 1 pepper)
1 Granny Smith apple, cored and chopped
1 cup (250 mL) Astro Original Balkan Plain 6% yogourt
¼ cup (64 mL) chopped red onion (soaked for 10 minutes in cold water)
2 tbsp (30 mL) chopped cilantro
1 tbsp (15 mL) quince or plum preserves
1 tsp (5 mL) cumin
1 head of romaine, chopped
8 tortilla wraps
Salt and pepper, to taste
- In a medium bowl, mix together all the ingredients except romaine and wraps. Season chicken salad with salt and pepper to taste.
To serve, place ¼ cup of chicken mixture down the center of 1 tortilla. Top with ¼ cup lettuce. Wrap tortilla around the chicken salad. Repeat with remaining ingredients.

- Add fibre by substituting flour for whole wheat tortillas.
