Decadent Chocolate Cupcakes

This recipe is exactly what it sounds like, a decadent recipe for the perfect chocolate cupcake with homemade chocolate frosting. Don't wait for a birthday party to whip up a batch of these!
1 stick (125 mL) Lactantia butter, softened
½ cup (125 mL) strong coffee
¼ cup (64 mL) cocoa powder
1 cup (250 mL) sugar
½ cup (125 mL) Astro Original Balkan Vanilla yogourt
1 tsp (5 mL) vanilla extract
1 cup (250 mL) flour
½ tsp (2.5 mL) baking soda
1 cup (250 mL) chocolate chips
¼ cup (64 mL) Astro Original Balkan Vanilla yogourt
- Preheat oven to 400°F (200°C).
In a large bowl, mix Lactantia butter, coffee, cocoa. Add sugar and Astro Original yogourt and mix until combined. Add egg and vanilla extract.
- Sift in flour and baking soda and mix until just combined.
Bake in paper lined muffin tin for 15-20 minutes of until a toothpick inserted comes out clean. Remove from oven and let cool.
- In a small bowl, melt chocolate.
Stir in Astro Original yogourt and mix until combined. Chill for 10-15 minutes.
- Spread onto cooled cupcakes.
